Becky's Apple Pie

7-8 Apples, sliced
1 C Sugar
1 tsp Cinnamon
1½ Tbsp Butter

Crumb topping:
1/2 C Butter
1/2 C Brown Sugar
1 C Flour

Heat oven to 425°. Mix sugar and cinnamon. Mix in apples. Put in crust, dot with first measure of butter. 
Mix crumb topping by letting second measure of butter get very soft and mix with brown sugar and flour by hand. Top pie with crumb topping and bake 50 minutes.

Party Chicken

8 chicken breasts, boneless
1 4 oz. jar chipped beef, rinsed
1 can cream of mushroom soup, undiluted
8 oz. sour cream
8 bacon strips

Wrap each chicken breast with a piece of bacon. Cover bottom of greased baking dish (8x12x2) with chipped beef. Arrange chicken on beef. Mix soup and sour cream and spread over chicken. Bake at 275° for 3 hours uncovered. Can be prepared ahead and refrigerated or frozen.

Baked French Toast

6 Eggs
1 C Milk
3 Tbsp Sugar
1 tsp Cinnamon
1/2 tsp Salt
1 loaf French Bread, sliced 1" thick

In 13"x9"x2" baking dish, beat eggs, milk, sugar, cinnamon, and salt until light and frothy. Add bread; let soak about 20 minutes on each side or until egg mixture is absorbed, or cover and refrigerate overnight.

Bake on heavily greased baking sheet in preheated 500° oven for 8 minutes on each side or until golden brown. (Or cook in a skillet in butter 4 minutes per side or until golden brown.)

Yield: 4 Servings

Buttermilk Chocolate Pudding Cake


2 Cups Sugar                                       
1 Cup Salad Oil                                 
2 Eggs, Beaten                                
2 Cups All Purpose Flour                    
½ tsp Salt                                         
1 tsp Soda                                         
¼ C Cocoa                                        
½ C Buttermilk                                 
1 C Water
1 tsp Vanilla

Frosting
1 Lb Powdered Sugar
¼ C Cocoa
¼ C Margarine, Melted
1 tsp Vanilla
⅓ C Buttermilk

Combine  sugar, oil, and eggs. Beat well. 
In a separate bowl, combine dry ingredients.
Add to sugar mixture a small amount at a time, stirring well after each addition. 
Blend in buttermilk, water, and vanilla. Batter will be thin. 
Pour into a lightly greased 9 by 13 inch pan. 
Bake at 350° for 35 minutes or until done. 
Spread frosting over hot cake and cool in pan.
For frosting, combine all ingredients, stir, and frost cake.

Tomato Basil Soup


1 Can Tomato Soup
1 Can Milk
1 tsp or less Basil leaves
1 Tbsp Leek Soup, Dip & Recipe Mix (by Knorr)
Substitute for soup mix: 1 Tbsp finely chopped Leek and 1/2 tsp garlic powder

Combine all ingredients. 
Simmer for approximately 10 minutes to allow flavors to blend. 
Stir often to keep milk from scorching or heat in a double boiler. 
Yield: 2 Servings

Sausage Balls


Yield: 5 Dozen Balls

1 Lb Sausage            
2 C Bisquick
1 Lb Cheese           

Sausage and cheese should be at room temperature before combining all ingredients. 
Shape into balls. 
Bake at 375° for 10-15 minutes.

Becky's Chicken Casserole


Chicken (Breasts, Thighs, Or Legs)
1 C Rice
1 Can Cream Of Chicken Soup
1 Can Cream Of Celery Soup
1 Can Chopped Mushrooms, with liquid
Butter
Salt

Butter large casserole dish. 
Sprinkle uncooked rice into dish.
Mix both soups, one scant teaspoon of salt, 1 1/2 cans of water, and one can of mushrooms with liquid. 
Pour mixture over raw rice.
Dip chicken into melted butter, salt pieces lightly, and place on top of soups.
Bake at 275° for 2 1/2 hours.  
Chicken browns nicely and rice puffs up around it.

Puddleduck’s Pecans (Toasted Pecans)


½ C Salad Oil
¼ C White Corn Syrup
Pecans
Salt

Mix oil and corn syrup together. 
Add pecans. 
Spread in flat pan and bake for 1 hour at 225°. 
Drain on paper towels. 
Salt to taste.
