Crock Pot Ham and Beans

1 lb dried great northern beans, other beans, or mixed beans, as desired
3 garlic cloves, peeled and sliced
1 large sweet onion, chopped coarsely
1/2 tsp kosher salt
1/2 tsp black pepper
1 tbsp chopped parsley
1/4 tsp ground cloves
1 lb smoked ham or 1 lb ham hock
6 c water or broth

Sort beans and soak in enough water to cover overnight.
Rinse and drain the beans before placing them in the crock pot.
Add all ingredients to the crock pot, cover, and cook on low for about 8 hours or until beans are tender and creamy.
Skim excess fat, if necessary, before serving.

Honey Glaze for Baked Ham


½ C honey
1 C brown sugar
½ C orange juice           

Mix ingredients and pour over ham for the last 30 minutes of the baking time with ham uncovered.

Wonton Sausage Appetizers


1 lb pork sausage            
1 med red pepper, diced            
1 med green bell pepper, diced           
1 bunch green onions, chopped
1 pkg wonton wrappers*
1 C shredded Colby cheese
1 C ranch dressing

Preheat oven to 350°. 
Lightly grease muffin pan (mini or regular size). 
Place 1 square wrapper in muffin cup, mold to fit. 
Prebake the wonton wrapper 5-6 minutes until set. 
Remove from oven.
Brown sausage in skillet, drain, set aside. 
Lightly sautee peppers until tender. 
Add green onions, cheese, and ranch dressing. 
Return meat to mixture and stir.
Once the mixture is ready, fill wonton wrappers with 1 tsp mixture. 
Return to oven. 
Bake an additional 6-8 minutes until golden brown. 
Repeat until mixture is used.

* Wonton wrappers usually found in the produce section with oriental foods or in freezer case near Filo dough
